Maria Jover established Parajes del Valle in 2018 and has already made her mark as one of La Mancha’s most talented up-and-coming winemakers. Following centuries-old traditions, she has embraced organic farming and the "Terrace" system, whereby vineyards are rented out to farmers who keep a percentage of the fruit in exchange for taking good care of the vines. She has also brought the age-old skin contact/orange wines to the region with resounding success!

Today's wine is crafted from 100% macabeo fermented with native yeasts and kept on the skins in concrete tanks for 15 days. Aromas of tangerine and orange peel follow on the palate;  the citrus flavors are laced with notes of dried fruits, green tea, and the merest hint of honey. Bright acidity brings the wine to a long finish.
